Federal Hill gains a Spanish Tapas Bar

Centro Tapas Bar www.centrotapasbar.com serving Spanish and South American Tapas Bar in Federal Hill, is opening this weekend in the spot where Bicycle was located at 1444 Light Street.

Walking by the other day, we were delighted to see that something new would open in what was once a hot spot created by the first owner Chef Barry Rumsey's, Bicycle Restaurant which he ran with his wife, Debbie from 1999-2006. Once Chef Rumsey left the restaurant, it never regained the panache it once had. The Rumseys moved to wine-lovers paradise, in Mosier, Oregon, and opened Now The Good River Restaurant + Thirsty Woman Pub.

Now, back to CENTRO TAPAS BAR-We met Chef/Owner George Dailey who explains he was born in England, but brought up in Venezuala. "The word "Centro" means downtown or center. The restaurant embodies the very same hip, casual atmosphere that is the essence of downtown dining,"  he explains on his opentable listing.

Chef George has been running ON THE HILL Cafe & Market on John Street in BOLTON HILL so he is no stranger to running a restaurant. Chef's goal is to offer farm-to-table dishes, authentic, but with a twist. Proudly, Chef George showed off his authentic Cerrano ham stand which hails all the way from Spain.

His Managing Partner Yvonne Edwardsen was busy planning her wine menu with guru, Greg of Reliable Churchill. CENTRO is set to be a Spanish Tapas Bar with Latin American infusion.

Little has changed in the restaurant since the Ramseys sold the spot to the former owner, Chef Nick Batey, who now owns Ullswater on Fort Avenue. But the quaint spot now housing CENTRO, is a rare find. It is tucked away from the hustle and bustle of South Baltimore's busy Light Street has a charm unlike others. There is a tremendous benefit in having a lovely garden out back where diners relish sitting when weather permits.

Chef George says that the garden, patio dining will return, but he is most interested to get the restaurant opened asap. Grand opening is this Saturday, March 20- now also find CENTRO on opentable.com- Book now:
