Fish On creates an ode to the Girl Scout Cookie

Like Girl Scout Cookies? Fish On, part of the Eastern Shore's mighty SODEL CONCEPTS and known for serving fresh, local seafood and creative delicacies surrounded by hip, modern decor is touting a new dessert using the old time cookie as its main ingredient.

"Come try our Trefoil, Date and Chocolate Bar with Hopkin's Caramel Crunch Ice Cream," invited Nelia Dolan, Director of Marketing. "$1 from each of these delicious desserts purchased goes to the Girl Scouts of America," she continued.

Here's the recipe:

3 cups chopped dates
1/4 cup sugar
1 1/2 cup water
1 cup chocolate chips
1 cup brown sugar
1 box Trefoil cookies, crushed into crumbs
1/2 tsp baking soda
1 tsp salt
1 1/2 cup oats
1 cup butter, cold cut into small cubes

In a small pot, simmer the dates, sugar and water until thickens. Let cool completely. Preheat oven to 350 degrees Stir in chocolate chips. Mix brown sugar, Trefoil crumbs, baking soda, salt and oats together with an electric mixer. Add the cold butter and mix until butter is mostly blended and the ingredients are crumbly.

Grease a 9x13 pan and press half the crumbles on the bottom. Spread date mix over the crust. Crumble the other half of crumbles on top and press into date mixture softly.

Bake for 25-35 minutes or until golden brown.
