Happy International Pineapple Day How might you celebrate? The flesh and juice of the pineapple are used in cuisines around the world. In many tropical countries, pineapple is prepared, and sold on roadsides as a snack. It is sold whole, or in halves with a stick inserted. Whole, cored slices with a cherry in the middle are a common garnish on hams in the West. Chunks of pineapple are used in desserts such as fruit salad, as well as in some savory dishes, including as a pizza topping. Crushed pineapple is used in yogurt, jam, sweets, and ice cream. The juice of the pineapple is served as a beverage, and is also as a main ingredient in such cocktails as the Piña colada. ( Source: Wikipedia)

I am going to go to BAHAMA BREEZE and have one of their signature cocktails-either the Goombay Smash or a Painkiller. The Goombay Smash cocktail originated in the Bahamas. It was created by Miss Emily at Blue Bee Bar. The original recipe is a secret, but Bahama Breeze's version is hand-crafted from spiced and dark rums mixed with fresh orange and pineapple juice. The Painkiller hails from the Soggy Dollar Bar in the British Virgin Islands and features dark rum with cream of coconut, pineapple and orange juices.

There is even a facebook page for this celebrated fruit saying "On April 2nd… Whether you're eating a pineapple upside-down cake, or sipping a pineapple juice, make sure to celebrate this day of pineapples one way or another! ;)"
