April is officially National Empanada Month and Cuba Libre Restaurant & Rum Bar is creating three new choices of the delicious stuffed pastry along with their five traditional varieties on its daily menu.  Guests can enjoy the expanded empanada menu all month, during both lunch and dinner service.  Additionally, on Monday, April 8th from 4:30 PM to 6:30 PM, Cuba Libre will offer seven specialty and signature empanadas for just $1 each (dessert empanada not included) as part of their National Empanada Day celebration.

 

Leading up to National Empanada Month, fans of Cuba Libre can get into the spirit by submitting their favorite at-home empanada recipe via Facebook® or Twitter® between March 1st and 9th.  Flavor combinations will be submitted to Chef-Partner Guillermo Pernot, who will select his top three recipes.  Cuba Libre will then conduct a poll on Facebook® for fans to select which empanada they want to see on Cuba Libre’s menu.  The winning empanada will be featured as one of the eight featured empanadas during the month-long promotion.

 

Developed by Chef-Partner Guillermo Pernot, the menu offers something for everyone.  New flavors available exclusively during the month of April include: Slow Braised Pulled Turkey with Sweet Peppers, Onions and Balsamic Reduction, as well as two dessert varieties including Arroz Con Leche Burlee: Coconut Rice Pudding, Brown Sugar Brulee, Rum-Raisin Chocolate Ganache Empanaditas, or the Cherry with Sugar and Cinnamon and topped with Whipped Cream.

 

In addition, guests can order from Cuba Libre’s signature Mamá Amelia’s Empanadas sampler, which is a mainstay on the Cuba Libre menu.  This popular selection includes Picadillo: Ground Beef, Olives and Raisins; Hand-Chopped Chicken with Corn, Sweet Peppers and Jack Cheese; Vegetarian Chorizo with Black Beans and Ripened Plantains, or the Pulled Pork with Roasted Poblano and Charred Tomatoes.  During lunch service, guests can choose two empanadas for $13, or three for $17, the empanadas are served with a baby spinach salad, goat cheese-ranch dressing and tomatillo relish.  During dinner service, guests can select one empanada as a special small plate for $5.50 each.
