WHY: Chef Stefanelli has sourced these Winter Black Truffles from Norcia, Italy, in the province of Perugia in southeastern Umbria.  Specimens can be found in late autumn and winter, reaching seven centimeters in diameter and weighing up to 100 grams.  Production is most exclusively European, with Italy accounting for 20 percent of product sold.  In the past ten years, the wholesale price of Winter Black Truffles has fluctuated between $500 and $1,100 per pound, with an average current price of $1,000 per pound wholesale over the past three years.  *Retail prices typically double that of wholesale when sold in smaller quantities by the ounce.
