Richard Sandoval’s colorful Latin-Asian inspired restaurant, Zengo, located at 781 7th Street, NW, 20001, is pleased to introduce its “Test Kitchen” series this October.  Every few months, Sandoval and his culinary team at Zengo research and develop new recipes featuring the cuisine and spirits of one Latin and one Asian country.  The result is a menu of specialty small plates and cocktails that showcase the flavors and techniques from each region.  These dishes will be new additions on Zengo’s menu, marked with a special “TK” symbol to note that it is an exclusive and limited time option. Available from October 2nd to December 31st, Chef de Cuisine Graham Bartlett is preparing Test Kitchen: Korea Mexico, which will be offered for dinner service beginning at 5 PM.

 

Guests will explore the fusion of Mexican and Korean flavors in Zengo’s artful blend of seasonal ingredients and modern techniques.  The Test Kitchen: Korea Mexico’s menu will showcase five plates with new interpretations such as Ceviche Dorado, with mahi-mahi, aji panca, kimchee puree, cucumber and cantaloupe; Pajeon Seafood Scallion Pancakes with shrimp, crab, avocado-corn salsa and garlic sweet chile sauce; Korean Fried Chicken with fermented chile, roasted corn-potato salad and pickle chayote; Adobo Roasted Chicken with bok choy kimchee, chorizo and potato in a garlic-lemon-chicken jus and Hot Stone Bibimbap of pork belly, prawns, sushi rice, Asian vegetables, salsa roja topped with a fried egg.  The Korea Mexico menu items range in price from $11-$27.

 

To complement these distinctive dishes, Zengo’s mixologists are crafting unique cocktails with the flavorful fruits, spices and spirits of Korea and Mexico, including Tecate Hibiscus Cocktail, Tecate beer, ginger, chile and lime; Agave Shoju Punch with tequila, mango, blood orange, lemon and mezcal float and Asian Pear Mezcal with mezcal, shoju and house-made grenadine, priced between $12 and $14.  As Richard Sandoval Restaurants marks its 15th year anniversary, Test Kitchen: Korea Mexico is another example of the myriad of ways in which Chef Sandoval explores the worldwide potential of Latin cuisine, with harmonious and inventive new dishes.
