In the summer of 2006, long-time friends Ike Grigoropoulos and Ted Xenohristos, along with chef Dimitri Moshovitis came up with the idea for CAVA over coffee. As 3 children of Greek immigrants they wondered to themselves why no one had opened a Greek restaurant that reminded them of the mezze/tapas style dining in Greece. 
They believe cooking should remain rooted in tradition and it should be real and delicious, letting the simple, natural flavors stand out. And the restaurant should be beautiful and comfortable, making the whole dining experience greater than the sum of its parts. If all that philosophy makes you hungry, come on over and make sure we’re living by our words, as all philosophers should. They have opened locations in DC, Rockville, and Arlington. Soon, they will be taking over the largest retail space in the Hyatt Place Hotel in Harbor East, when the Hyatt opens later this year.
