What a meal we enjoyed in the home of Chef Calle and Mary Vahl of Chef Calle's Baltimore Distinctive In Home Dining. I would like to share that this is a home that immediately makes one comfortable; figuratively & literally (I got to wear my new bunny slippers and see Patti's styling slippers below). We had a true CHEF'S Table as we ate in the home of Chef Calle and Mary Vahl!
We started with some bubbly from our "conduit" Patti Peek Neumann (LOVE Etoile by MOET!). Patti got together 6 foodies to social network, sample and take and relay live the experience on twitter and facebook. In the group were Jessica Lemmo, Janet Hanley, Nancy Gertner, Michael Heyse, Patti Neumann and Lisa Ossie (who contributed mightily to this review.) Jessica Lemmo, food blogger and founder of Adventures in Baltimore Restaurants made a twitter "hashtag for the event '#dinepeek'. This was one meal where it was cool to use your ipad, iphone and smart devices at the table!
Soon, we were seated & treated to a trio of soups: beet, roasted pepper-Nancy and Patti's favorite favorite, pea puree-Lisa's favorite. Wine
Choice: Mer du Soleil Chardonnay.
Next, a tasty tuna crudo with a creamy wasabi avocado base & topped with what I initially thought was too much candied lemon rind. Well color me wrong, as I soon realized that you needed that much to make the "go to the bottom of the glass" experience work. We all decided that this dish should be Chef Calle's Baltimore Distinctive In Home Dining signature dish! We all wanted to, but refrained from licking the martini glass in which it was served.
Wine choice- Panther Creek (non vintage) Pinot Noir and a German Champagne.
Loved the artichoke mash topped with a gently seared scallop, but was worried about trend of pureed foods. Have to talk about the white been puree topped with sautéed spinach and delicate shrimp. All three items had a creamy butteriness to them with no deviation in texture.
Tasted delish, but needed a punch. Chef Calle was humble enough take feedback from the guests and we discovered that a good squeeze of lemon juice added the right acidity and completely elevated the richness of what was previously not an adequate base.
Wine Choice: Janet's fabulous Champagne
This was followed by a simple small plate of greens, lightly dressed that again needed another lift in texture and earthiness to balance the dressing, which was too vinegary. Lisa's suggestion, a parmesan tuille, and maybe some dried cherries might be a nice addition, but I enjoyed the fresh basic Italian blend. It was very refreshing.
Next came the caye
nne peppered sweet potato ravioli in sage butter. You see, Chef Calle was trained in Italy and it showed! It was divine! I loved the thought that went into the homemade ravioli and the kick of the filling was subtle and flirty at the same time. That was followed by Goat cheese topped with honey and walnuts - a sweet addition. This was enjoyed by a special bottle of Chateau Neuf Du Pape-airated right at the table by one of our guests in his traveling decanter!
Dessert-Pannacotta - velvety, seductive and held us in our clutches for our trip home. We would highly recommend this committed couple for an at home experience that will only get better with age!

Bring the great restaurant into your home
Right before the hussle and bussle of Christmas week I was able to join some local “foodies” and City Peek Patti for an elegant wine dinner in the home of Chef Calle and Mary Vahl of Chef Calle's Baltimore Distinctive In Home Dining. This experience brought a new level to a CHEF’s table since we were in the Chef’s home enjoying this high end restaurant worthy dinner.
